Ingredients                                     

  • 3 pounds sweet potatoes (about 8), peeled and cut into 1-inch chunks                                                 
  • salt and pepper to taste                                                  
  • 1/2 cup whole milk                                                 
  • 4 tablespoons butter                                                 
  • 1 T +.5 t The Killer Cook's Punk rub devided                                                
  • 2 cups mini marshmallows or chopped regular marshmallows
  • 1 T oilve oil

     

Method:

  • Preheat oven to 400
  • Place cubed sweet potatoes on a sheet pan, drizzle with oilve oil and toss with 1/2 T of the Punk rub. Roast till tender about carmelized and tender about 40-55 minutes 
  • Lower the oven heat to 375
  • In a large pot gently heat the milk, butter and 1/2 T punk rub. Remove from heat and add the warm sweet potatoes, Mashing till smooth (or you can run them through a potato ricer and fold in the creme mixture)
  • Place the mashed sweet poatoes in an oven safe dish, top with marshmallows and bake till the center is warm and the marshmellows are toasty brown about 15-20 min.
