Ingredients: 

  • 1 15 oz can of chick peas drained
  • 1 15 oz can of cannellini bean drained 
  • 1 T tahini 
  • 1/4 c extra virgin oil oil + 2 T
  • 1 T apple cider vinegar 
  • 1 head of garlic
  • 1 T + 1t The Killer Cook's Mo'Rockin Rub
  • oak, hickory or alder wood

Method:

Cut the top off the head of garlic and rub with olive 2 T of olive oil season with 1 t of Mo'Rockin Rub. Place in 225 degree smoker for 1 hour. Remove from smoker and let cool, peel out garlic cloves and set a side. In a large food processor combine both beans, tahini, vinegar, and garlic cloves with the remaining rub. Puree till smooth while slowly adding the extra virgin olive oil. Let chill at least 1 hr before serving. Will keep for 7 days
